The first step is to prepare the ingredients. You can choose your favorite side dishes that are resistant to burning. Soak the dried shiitake mushrooms in advance until they are half-soft, then wash them off and soak them in water again. You can use the second soaking water to cook rice. Cut the carrots, slice the big shiitake mushrooms a bit smaller, and leave the small ones. It is best to soak the bacon for half an hour beforehand, remove any excess salt, scrub it clean, and dice it into small pieces.
The second step is to rinse the rice and add the second soaking water of the shiitake mushrooms. Because there are many side dishes, you need less rice than when cooking a regular batch of rice. Bacon and sausages are salty, so add a little soy sauce to adjust the color and taste. If using raw meat, add a little salt. Do not use too much dark soy sauce as it will darken the color too much.
Choose side dishes to your preference/liking, pick those with good color, and are not easy to overcook. Cut them into large or small pieces according to your preference.
